The Journey of Darna
In Tunisan, Darna means "our home."
Not a tagline — a promise about what happens when you sit down to eat with us.
Darna is a project Amira dreamed of for over a decade before it ever became real. Long before there was a stall, there was a childhood spent watching her mother and aunt cook everything from scratch, nothing shortcut.
"My mum and aunty taught me to cook, so my whole childhood I would watch them in the kitchen" she says. "They make everything from scratch. I try to replicate this at Darna."
That's still how she cooks today, steaming rather than rushing, leaning on the flavours she grew up with: caraway, coriander, harissa, lamb.
Every recipe carries four generations with it. Amira, her mother Faouzia, her aunt Habiba, her grandmother Manobia, all from Tunisia. Nothing here is reinvented for Sydney. And it's not "North African" or "Mediterranean-inspired". As Amira puts it, "Nobody seems to know much about Tunisian food, it's very different to other countries. Every country has its own cuisine." Darna exists to close that gap.
In Tunisian culture, hospitality is offered generously without being asked. It's why the doors of a Tunisian home are always open to one more guest. That's what we're building here.
You'll find us Saturdays with a stall full of Brik, Fricassé, Couscous and a market favourite YuYus.
